Tagatose sweetener company upscales using instrumentation

Bonumose successfully starts up tagatose sweetener production from starch-based feedstock with Endress+Hauser instrumentation

Charlottesville, Virginia-based Bonumose, a growth-stage startup tagatose sweetener company, primarily manufactures the rare sweetener. Using an enzymatic reaction, Bonumose can convert starch-based materials, such as maltodextrin, grains and starches, to create a “rare monosaccharide” that tastes and functions like sugar but has positive health benefits. Bonumose decided to enhance, automate and digitalize its process with Endress+Hauser instrumentation to reach its company growth goals.

Ready for growth

  • After months of utilizing Endress+Hauser instrumentation, Bonumose is primed for expansion and growth. Bonumose has successfully started up tagatose production from starch-based feedstock.

“Without Endress+Hauser instrumentation telling us all of our operating parameters, there’s no way we’d have dialed into the point we are now."

The need to upscale

Bonumose needed proper instruments to upscale and optimize the amount of tagatose it produced to continue that upward trajectory. While Bonumose faced typical startup hurdles, it also had to develop methodologies for processing tagatose due to the lack of publicly available industrial knowledge. The company had few to no use cases to study when it launched. In addition, Bonumose faced challenges gathering prudent information on densities and volumes to use in its process.

Process instrumentation is worth its weight in … tagatose

Avid Solutions, a system integrator partner of Endress+Hauser, constructed the bridge between Endress+Hauser and Bonumose after gauging the healthy food ingredient manufacturer’s needs. Today, with various Endress+Hauser instrumentation found throughout their skids and facility, Bonumose is now preparing to scale as a business. From flowmeters to liquid analysis sensors to level and pressure sensors and countless others, Bonumose’s process is drenched in signature Endress+Hauser blue.

How is tagatose made and what makes it different from sugar?

What sets tagatose apart from regular sugar is that, while it provides a similar sweetness and functionality, it is naturally occurring, significantly rarer and associated with positive health effects, including benefits for gut health and type 2 diabetes. Regular sucrose does not offer these metabolic advantages.

Any health benefit of tagatose compared to other sweeteners?

Tagatose is a natural sweetener that tastes and functions like sugar but offers meaningful health advantages. According to the National Library of Medicine, tagatose has shown positive effects on gut health and benefits for people with type 2 diabetes—health outcomes not associated with regular sugar or most common sweeteners. These benefits stem from tagatose’s unique metabolic behavior as a rare monosaccharide created through Bonumose’s enzymatic process.

Which instruments are best for measuring flow rate?

For flow rate (volumetric flow), the best instruments are electromagnetic flowmeters such as the Proline Promag family. These meters are ideal for electrically conductive liquids and offer high accuracy, no pressure loss and robust reliability across a wide range of applications.

How does Endress+Hauser's liquid analysis tech compare?

Endress+Hauser’s liquid analysis technology stands out from other brands due to its global leadership, best‑in‑class digital sensor ecosystem (Memosens + Liquiline), high reliability, advanced diagnostics and proven performance over competitors in real processes. Their comprehensive portfolio and strong innovation track record position them as one of the most trusted and forward‑thinking providers in the industry.
